  • 2 cups Green Cabbage Finely shredded
  • 1 large Carrot Grated
  • 1 piece Red Bell Pepper Thinly sliced
  • 0.25 cup Red Onion Thinly sliced
  • 0.25 cup Fresh Cilantro Chopped
For the Dressing
  • 3 tablespoons Lime Juice
  • 2 tablespoons Honey or Maple Syrup Or substitute with agave nectar
  • 1 tablespoon Sesame Oil Can be omitted for a lighter dish
  • Salt and Pepper Adjust to taste

Preparation Steps
  1. In a large mixing bowl, combine the diced ripe mangoes, finely shredded green cabbage, grated carrot, thinly sliced red bell pepper, sliced red onion, and chopped cilantro. Use a pair of tongs to gently toss the ingredients together.
  2. In a separate small bowl, whisk together 3 tablespoons of fresh lime juice, 2 tablespoons of honey (or maple syrup), and 1 tablespoon of sesame oil. Add salt and pepper to taste.
  3. Pour the prepared dressing over the mango and vegetable mixture. Using the tongs, gently toss the slaw to ensure every piece is evenly coated.
  4. Allow the dressed Mango Slaw to sit for 5-10 minutes at room temperature.
  5. Serve the Mango Slaw chilled or at room temperature as a colorful side dish.
