Step-by-Step Instructions
  1. In a medium bowl, whisk together chipotle powder, lime juice, minced garlic, olive oil, and salt until combined.
  2. Add chicken to the marinade and coat well. Cover with plastic wrap and marinate for at least 20 minutes.
  3. Preheat a large skillet over medium-high heat. Drizzle in olive oil and heat until shimmering.
  4. Add marinated chicken to the skillet and cook for 4-5 minutes per side until browned and cooked through.
  5. Remove chicken and add chopped onion, corn, and bell pepper to the skillet. Sauté for 5-7 minutes.
  6. Return the chicken to the skillet, toss with vegetables and cook for another 2-3 minutes.
  7. Transfer to a serving platter and garnish with cilantro if desired. Serve hot.
