Preparation
- Mix warm water (about 110°F) with active dry yeast in a bowl and let sit for 5–10 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Add yeast mixture and olive oil, mix until a dough forms.
- Knead the dough on a floured surface for about 5–7 minutes until smooth, then let it rise in a greased bowl for 1 hour.
- Heat olive oil in a skillet, sauté sliced onions for about 20 minutes until golden.
- Add minced garlic and spinach to onions, cooking for 2–3 minutes until spinach is wilted. Stir in nutritional yeast.
- Roll out the dough into a rectangle, spread the cooled filling, roll tightly, and cut into 1-inch pieces.
- Place rolls in a greased baking dish, cover, and let rise for another 30 minutes.
- Preheat oven to 375°F, bake rolls for 25–30 minutes until golden brown.
- Let cool for 5 minutes before serving.
