Step-by-Step Instructions for Toffee Chex Mix
- Preheat your oven to 250°F (120°C) and line a large rimmed baking sheet with parchment paper.
- In a very large heatproof bowl, mix together 8–9 cups of Chex cereal and 1.5 cups of your favorite nuts.
- In a medium saucepan, melt 1 cup of unsalted butter, 1.5 cups of brown sugar, and 0.5 cup of light corn syrup over medium-high heat. Stir continuously until smooth, then boil for 5 minutes.
- Remove from heat and whisk in 1 teaspoon of vanilla extract, 0.5 teaspoon of fine salt, and 1 teaspoon of baking soda.
- Pour the hot toffee over the Chex cereal and nut mixture, folding gently until coated.
- Spread the mixture evenly onto the baking sheet and bake for 45-60 minutes, stirring every 15 minutes.
- Remove from the oven and allow to cool completely for 30-45 minutes, then break into pieces.
