Step-by-Step Instructions for Toffee Chex Mix
  1. Preheat your oven to 250°F (120°C) and line a large rimmed baking sheet with parchment paper.
  2. In a very large heatproof bowl, mix together 8–9 cups of Chex cereal and 1.5 cups of your favorite nuts.
  3. In a medium saucepan, melt 1 cup of unsalted butter, 1.5 cups of brown sugar, and 0.5 cup of light corn syrup over medium-high heat. Stir continuously until smooth, then boil for 5 minutes.
  4. Remove from heat and whisk in 1 teaspoon of vanilla extract, 0.5 teaspoon of fine salt, and 1 teaspoon of baking soda.
  5. Pour the hot toffee over the Chex cereal and nut mixture, folding gently until coated.
  6. Spread the mixture evenly onto the baking sheet and bake for 45-60 minutes, stirring every 15 minutes.
  7. Remove from the oven and allow to cool completely for 30-45 minutes, then break into pieces.
