Step-by-Step Instructions
  1. Peel, slice, and dice the pear. Toss with lemon juice to prevent browning.
  2. Cook the diced pancetta in a skillet over medium heat for 5-7 minutes until crispy.
  3. Add shallots to the pancetta fat in the skillet and sauté for about 1 minute.
  4. Stir in Dijon mustard, then add frozen peas and diced pears, cooking for about 5 minutes.
  5. Fold in half of the pancetta along with parsley and black pepper, then serve topped with remaining pancetta.
