Ingredients
  

For the Rice
  • 3 cups Water filtered or tap works perfectly.
  • 1.5 cups Long grain white rice rinse before cooking to eliminate excess starch.
For the Meat Mixture
  • 6 slices Bacon bring rich flavor and crispness; swap for turkey bacon to make it leaner.
  • 1.5 pounds Ground beef choose 80% lean for ultimate flavor.
  • 1 Onion chopped; yellow or white recommended.
  • 0.5 Green bell pepper chopped; adds crunch and sweetness.
For the Casserole
  • 1 can RO*TEL original diced tomatoes with green chilies infuses acidity and depth.
  • 1.5 teaspoons Salt adjust to taste.
  • 0.25 teaspoon Ground black pepper feel free to increase for more kick.
For Topping
  • 1.5 cups Shredded cheddar cheese melts beautifully into a creamy finish.
  • 1 cup Shredded pepper jack cheese optional for a spicy kick.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and coat a 9 x 13-inch baking dish with butter or cooking spray.
  2. Rinse 1 ½ cups of long grain white rice under cold water until the water runs clear.
  3. In a medium pot, bring 3 cups of water to a boil, add the rinsed rice, reduce heat, cover and simmer for 15-20 minutes until tender.
  4. Fry 6 slices of bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Remove bacon and crumble it.
  5. In the same skillet, add 1 ½ pounds of ground beef, 1 chopped onion and ½ chopped green bell pepper, sauté for 7-10 minutes until cooked and browned.
  6. In the baking dish, combine the cooked rice, sautéed beef mixture, 1 can of RO*TEL diced tomatoes, and crumbled bacon.
  7. Sprinkle 1 ½ cups of cheddar cheese and 1 cup of pepper jack cheese over the mixture, cover with foil.
  8. Bake the casserole in the preheated oven for 30 minutes until cheese is melted and bubbly.
