- Preheat your oven to 350°F (175°C).
- Melt 1 cup of unsalted butter over low heat in a medium saucepan.
- Add 1 cup of brown sugar to the melted butter, stirring until the mixture becomes bubbly and glossy, about 2–3 minutes.
- Stir in 1 teaspoon of vanilla extract and a pinch of salt.
- Pour 8 cups of Chex cereal into a large mixing bowl and drizzle the toffee mixture over it, gently folding to coat.
- Spread the coated Chex mixture onto a parchment-lined baking sheet and bake for 15 minutes, stirring halfway through.
- Let the Toffee Chex Mix cool on the baking sheet for about 10 minutes before serving.
