Toffee Coating
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • pinch salt
Cereal Base
  • 8 cups Chex cereal any variety (rice, corn, wheat)
Optional Add-ins
  • chopped nuts pecans or walnuts
  • pretzels
  • chocolate chips or dried fruits cranberries or raisins

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Melt 1 cup of unsalted butter over low heat in a medium saucepan.
  3. Add 1 cup of brown sugar to the melted butter, stirring until the mixture becomes bubbly and glossy, about 2–3 minutes.
  4. Stir in 1 teaspoon of vanilla extract and a pinch of salt.
  5. Pour 8 cups of Chex cereal into a large mixing bowl and drizzle the toffee mixture over it, gently folding to coat.
  6. Spread the coated Chex mixture onto a parchment-lined baking sheet and bake for 15 minutes, stirring halfway through.
  7. Let the Toffee Chex Mix cool on the baking sheet for about 10 minutes before serving.
