Method
 

Step-by-Step Instructions
  1. Boil salted water and cook wide rice noodles until al dente, about 4-6 minutes. Drain and rinse with cold water.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  3. Sauté minced garlic in hot oil for about 30 seconds until fragrant.
  4. Add protein to the skillet, stir-frying until cooked through (3-5 minutes for chicken, 2-3 minutes for shrimp).
  5. Add fresh vegetables to the skillet and sauté for around 2 minutes until softened.
  6. Combine cooked noodles with protein and vegetables, add soy sauce and sugar, tossing everything for 1-2 minutes.
  7. Remove from heat and drizzle fresh lime juice before serving immediately.
