- Boil salted water and cook wide rice noodles until al dente, about 4-6 minutes. Drain and rinse with cold water.
- Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Sauté minced garlic in hot oil for about 30 seconds until fragrant.
- Add protein to the skillet, stir-frying until cooked through (3-5 minutes for chicken, 2-3 minutes for shrimp).
- Add fresh vegetables to the skillet and sauté for around 2 minutes until softened.
- Combine cooked noodles with protein and vegetables, add soy sauce and sugar, tossing everything for 1-2 minutes.
- Remove from heat and drizzle fresh lime juice before serving immediately.
