For the Quesadillas
  • 4 large flour tortillas
  • 2 cups fresh spinach washed and chopped
  • 1 cup feta cheese crumbled
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper to taste

Method
 

Cooking Instructions
  1. Heat olive oil in a skillet over medium heat.
  2. Add spinach and cook until wilted.
  3. In a mixing bowl, combine wilted spinach, feta, garlic powder, onion powder, and black pepper.
  4. Spread the mixture evenly on half of each tortilla and fold over.
  5. Cook each quesadilla in the skillet for 2-3 minutes on each side until golden brown.
  6. Slice and serve warm.
