Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease an 8x8-inch baking dish.
  2. Combine cooked sushi rice, rice vinegar, sugar, and salt in a bowl. Mix well and press into the baking dish.
  3. Flake the salmon into a bowl, then add mayonnaise, Sriracha, soy sauce, and sesame oil. Mix until combined.
  4. Spread the salmon mixture evenly over the rice layer in the baking dish.
  5. Sprinkle shredded mozzarella cheese over the salmon mixture evenly.
  6. Bake for 18-20 minutes until the cheese is melted and golden brown.
  7. Garnish with green onions and toasted sesame seeds. Serve warm with roasted seaweed on the side.
