Step-by-Step Instructions for Spicy Ginger Chicken
  1. Start by slicing the boneless, skinless chicken thighs into bite-sized pieces and seasoning them generously with salt and pepper. Allow the chicken to sit while you prepare the other ingredients.
  2. In a large skillet, heat about two tablespoons of olive oil over medium-high heat.
  3. Add the seasoned chicken pieces to the hot skillet and sauté for approximately 5-6 minutes until golden brown and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add the minced ginger and garlic, stirring for about 1 minute until fragrant.
  5. Whisk together the soy sauce, rice vinegar, honey, sriracha, and sesame oil in a bowl until fully combined. Set aside.
  6. Add the sliced bell peppers and onions into the skillet and cook for about 3-4 minutes until they soften.
  7. Return the cooked chicken to the skillet and pour the prepared sauce over it. Stir to coat well and let it simmer for 1-2 minutes.
  8. Stir to combine all ingredients, allowing the sauce to thicken for an additional 2-3 minutes.
