  • 1 teaspoon Ground Cumin
  • 1 teaspoon Garlic Powder or fresh garlic if preferred
  • 1 teaspoon Onion Powder or fresh onion if preferred
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Lime Juice fresh lime juice is best
  • 1/2 cup Breadcrumbs can use panko for extra crunch

For the Chipotle Mayo

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine ground chicken, finely chopped chipotle peppers in adobo sauce, adobo sauce, smoked paprika, ground cumin, garlic powder, onion powder, salt, black pepper, lime juice, breadcrumbs, and egg. Mix well using your hands or a spoon until all ingredients are just combined.
  2. Divide the flavorful ground chicken mixture into four equal portions. Shape each portion into a patty about ¾ inch thick.
  3. Preheat your grill or skillet over medium-high heat to about 375°F (190°C). Lightly grease the grates or skillet with oil. Place the patties onto the grill or skillet, cooking for about 5-6 minutes per side or until the internal temperature reaches 165°F (74°C).
  4. While the patties are cooking, whisk together mayonnaise, minced chipotle pepper, lime juice, garlic powder, and a pinch of salt in a small bowl for the chipotle mayo.
  5. Toast your burger buns on the grill or in a toaster, spread chipotle mayo on the bottom half of each bun, and add lettuce, chicken patty, sliced tomatoes, onions, and pickled jalapeños.
