  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Bowl
  • 1 medium Avocado Can swap with hummus
  • 2 cups Fresh Greens e.g. spinach, arugula
  • 1 cup Grain e.g. quinoa, brown rice
For the Dressing
  • 2 tablespoons Lime Juice
  • 2 tablespoons Olive Oil
  • 1 tablespoon Honey Can substitute with maple syrup
  • 1 pinch Salt
For Toppings
  • 1/4 cup Nuts or Seeds e.g. sunflower seeds, pumpkin seeds

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare your baking sheet by lining it with parchment paper.
  2. Rinse and drain one can of chickpeas under cold water, then pat them dry with a clean towel.
  3. In a mixing bowl, toss the dried chickpeas with olive oil and chosen spices until evenly coated.
  4. Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast in the preheated oven for about 20-30 minutes, stirring halfway through.
  5. Chop your fresh greens and prepare your chosen grain according to package instructions.
  6. Whisk together lime juice, olive oil, honey, and a pinch of salt for the dressing.
  7. Assemble your bowls starting with the cooked grain, followed by fresh greens, diced avocado, and crispy chickpeas.
  8. Add any extra toppings you desire, such as nuts or seeds.
