Method
 

Step-by-Step Instructions
  1. Preheat a cast-iron skillet or griddle over medium-high heat for about 5 minutes.
  2. Lightly brush one side of each tortilla with mayo.
  3. Season the ground beef with salt, pepper, and garlic powder; mix well.
  4. Press a quarter of the seasoned beef onto one half of each tortilla.
  5. Cook the tortillas beef-side-down in the hot skillet for 2-3 minutes until crispy.
  6. Flip each quesadilla, sprinkle cheese on top, and fold in half.
  7. Grill until both sides are golden brown and crispy.
  8. Allow to rest for 1-2 minutes before cutting.
