  1. Wash and peel the potatoes. Dice into uniform chunks. Chop the onion, garlic, bell pepper, and celery.
  2. Combine the diced potatoes, onion, garlic, bell pepper, and celery in the slow cooker. Add smoked paprika, Cajun seasoning, thyme, salt, and pepper.
  3. Pour in chicken or vegetable broth until vegetables are submerged. Stir gently to coat.
  4. Cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
  5. Mash some soup for texture, leaving some chunks for a rustic feel.
  6. Stir in heavy cream and butter. Cook on high for an additional 15–20 minutes. Adjust spice with cayenne pepper if desired.
  7. Taste and adjust seasonings as necessary. Serve warm, garnished with cheddar cheese and green onions.
