Ingredients
  

For the Filling
  • 1 lb Ground Beef opt for lean ground beef
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 medium Jalapeño Peppers chopped
  • 1 tbsp Chipotle Chili Powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Cumin
  • 1 tsp Black Pepper
  • 1 cup Red Salsa
  • 1 cup Enchilada Sauce
  • 1 can Black Beans rinsed
  • 1 cup Corn
For the Cornbread Topping
  • 1 package Jiffy Cornbread Mix
  • 2 large Eggs
  • 1 cup Milk
For Garnishing
  • 1 cup Sour Cream
  • 1 medium Tomatoes diced
  • 1/4 cup Cilantro chopped
  • 1 cup Guacamole

Method
 

Main Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the lean ground beef for 5-6 minutes.
  3. Add diced onion, minced garlic, and chopped jalapeños; sauté for 3-4 minutes.
  4. Sprinkle in chipotle chili powder, paprika, salt, cumin, and black pepper; stir for 1-2 minutes.
  5. Pour in red salsa and enchilada sauce; simmer for 5 minutes, stirring occasionally.
  6. Stir in drained black beans and corn; mix thoroughly and transfer to a greased baking dish.
  7. In a bowl, mix Jiffy cornbread mix with eggs and milk; stir until combined.
  8. Spread the cornbread mixture evenly over the filling in the baking dish.
  9. Bake for 25-30 minutes until cornbread is golden brown.
  10. Let cool for 5 minutes before serving; garnish with sour cream, tomatoes, cilantro, and guacamole.
