  • 12 Mushrooms Baby bellas or portobello varieties work best
For the Filling
  • 1 pound Shrimp (peeled & deveined) Fresh shrimp is recommended
  • 8 ounces Cream Cheese Ensure it's softened for easy mixing
  • 1 tablespoon Mayonnaise Adds moisture to the filling
  • to taste Salt Essential for bringing out the flavors
  • to taste Pepper Essential for bringing out the flavors
For the Topping
  • 1 cup Breadcrumbs Use Italian breadcrumbs for added flavor
  • 1/4 cup Grated Parmesan Cheese Optional but highly recommended
  • 2 tablespoons Unsalted Butter Melted

Method
 

Steps to Prepare
  1. Preheat your oven to 400°F (200°C) and clean the mushrooms gently. Remove the stems and place the caps upside down on a baking sheet.
  2. Bake the mushroom caps for about 15 minutes until slightly softened, then let cool.
  3. Pat dry the shrimp and sauté in a skillet with olive oil for 3-4 minutes until pink.
  4. Chop the cooked shrimp and mix with cream cheese, mayonnaise, lemon juice, salt, and pepper.
  5. Prepare the topping by mixing breadcrumbs with melted butter and fold in Parmesan cheese (if using).
  6. Spoon the filling into the mushroom caps, sprinkle with the breadcrumb mixture evenly on top.
  7. Return to the oven to bake for an additional 20 minutes until the topping is golden brown.
  8. Remove from the oven, let cool slightly, and serve garnished with fresh herbs.
