- In a large skillet, pour in olive oil and heat over medium heat for about 2 minutes.
- Add onion, bell pepper, and celery to the skillet, and sauté for approximately 5 minutes.
- Stir in minced garlic and sliced sausage. Cook for another 4 to 5 minutes.
- Add rinsed rice, chicken broth, Cajun seasoning, and smoked paprika. Stir well.
- Increase the heat until it comes to a boil, cover, then reduce heat and let simmer for about 15 minutes.
- Add peeled and deveined shrimp about 5 minutes before rice is done, cover and cook until shrimp are pink.
- Taste and adjust seasoning if needed, then garnish with sliced green onions before serving.
