  • 1 tablespoon Ginger (minced) Fresh recommended, but ground is a good substitute.
  • 4 cloves Garlic (minced) Always use fresh for best flavor.
  • 1 tablespoon Sesame Oil Can substitute with olive oil, but taste will change.
  • 2 tablespoons Gochujang (Korean chili paste) Reduce for less spice, or use red pepper flakes.
  • 8 ounces Noodles (udon or ramen) Fresh or dried, depending on cooking time.
  • 2 stalks Green Onions (sliced) For garnishing.
  • 1 tablespoon Sesame Seeds Optional garnish.
  • 1/4 cup Fresh Cilantro Optional for garnish.

Method
 

  1. Cut beef chuck into bite-sized pieces and season with black pepper.
  2. In a bowl, combine beef broth, soy sauce, brown sugar, minced ginger, minced garlic, sesame oil, and gochujang. Whisk until sugar dissolves.
  3. Transfer beef to slow cooker, pour sauce over, and stir gently. Set to low for 6-8 hours.
  4. Check beef for tenderness at 6 hours; can switch to high for 3-4 hours if needed.
  5. Prepare noodles according to package instructions 15-20 minutes before beef is done.
  6. Once beef is tender, add cooked noodles to slow cooker and stir gently. Let sit for 5 minutes.
  7. Serve in bowls with garnishes of green onions, sesame seeds, and cilantro.
