- Cut beef chuck into bite-sized pieces and season with black pepper.
- In a bowl, combine beef broth, soy sauce, brown sugar, minced ginger, minced garlic, sesame oil, and gochujang. Whisk until sugar dissolves.
- Transfer beef to slow cooker, pour sauce over, and stir gently. Set to low for 6-8 hours.
- Check beef for tenderness at 6 hours; can switch to high for 3-4 hours if needed.
- Prepare noodles according to package instructions 15-20 minutes before beef is done.
- Once beef is tender, add cooked noodles to slow cooker and stir gently. Let sit for 5 minutes.
- Serve in bowls with garnishes of green onions, sesame seeds, and cilantro.
