- In a large sauté pan, heat 2 tablespoons of cooking oil over medium heat. Add 1 chopped onion and cook for about 2 minutes until translucent and fragrant.
- Increase heat to medium-high and add 1 pound of ground beef, breaking apart. Cook for 5-7 minutes until browned.
- Add 3 minced garlic cloves and 1 tablespoon of grated ginger. Sauté for 2 minutes until aromatic.
- Stir in 2 tablespoons of tomato paste, 2 teaspoons of curry powder, 1 teaspoon of cayenne, and 1 teaspoon of garam masala. Cook for 2-3 minutes.
- Pour in 1 can of coconut milk and 1 cup of broth, stir to combine. Season with salt and black pepper to taste and add juice of half a lemon. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 15 minutes, stirring occasionally.
- Taste and adjust seasoning. Serve hot garnished with fresh chopped cilantro.
