- In a mixing bowl, season the ground chicken with salt and pepper. Mix gently and divide into four balls.
- Preheat a skillet over medium-high heat for about 3 minutes. Add oil if necessary.
- Carefully place the chicken balls in the skillet, allowing them to sizzle for 1-2 minutes.
- Smash each ball into a patty about 1/4 to 1/2 inch thick and let cook for 2-3 minutes.
- Flip the patties and add a slice of cheese on top. Cover the skillet for 30 seconds to melt the cheese.
- Cook the second side for another 2-3 minutes until the internal temperature reaches 165°F (74°C).
- Toast the brioche buns cut-side down in the skillet for about 1 minute.
- Spread mayo on the bottom bun, layer with lettuce, cheesy patty, tomato slices, pickles, and burger sauce. Top with the other half of the bun.
