  • 1 cup beef broth low-sodium recommended

Step-by-Step Instructions
  1. Prepare the Ingredients: Cut the beef stew meat into bite-sized pieces and halve the baby potatoes. Preheat your slow cooker on low.
  2. Optional Potato Parboiling: Parboil the potatoes in boiling water for about 5 minutes, then drain.
  3. Sear the Beef: Heat olive oil in a skillet and sear the beef for 4-5 minutes until browned. Remove from skillet.
  4. Make the Garlic Butter Sauce: Mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper in a bowl.
  5. Assemble in the Slow Cooker: Layer potatoes, add seared beef, pour sauce over everything, and add beef broth.
  6. Slow Cook to Perfection: Cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
