Step-by-Step Instructions
  1. Start by seasoning the boneless, skinless chicken breasts with salt and pepper on both sides. Allow the chicken to sit for about 10 minutes.
  2. In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat.
  3. Carefully place the seasoned chicken breasts in the hot skillet. Sear for 4-5 minutes until golden-brown. Flip and cook for another 4-5 minutes. Remove and set aside.
  4. In the same skillet, reduce heat to medium and add the brown sugar, soy sauce, ketchup, minced garlic, and ground ginger. Stir well.
  5. Add fresh pineapple chunks to the sauce, stirring to coat. Cook for 2-3 minutes until pineapple softens.
  6. Return the seared chicken breasts to the skillet, ensuring they are well-coated with the sauce.
  7. Reduce heat to low, cover, and simmer for 20-25 minutes until the chicken reaches 165°F.
  8. Garnish with chopped fresh cilantro. Serve warm, optionally with steamed rice or quinoa.
