- Preheat your oven to 325°F (160°C).
- Pat the beef short ribs dry and season both sides with salt and black pepper.
- In a large Dutch oven, heat olive oil over medium-high heat and sear each side for 3-4 minutes.
- Remove the ribs and in the same pot, sauté chopped onion, carrot, and celery for about 5 minutes.
- Add minced garlic and tomato paste, cooking for another minute.
- Pour in red wine and scrape the bottom, letting it simmer for about 5 minutes.
- Return the ribs to the pot, cover with beef broth and add herbs.
- Cover and braise in the oven for 2½ to 3 hours until fork-tender.
- Remove ribs, strain the sauce, and skim off excess fat.
