Step-by-Step Instructions for Melt-in-Your-Mouth Braised Beef Short Ribs
  1. Preheat your oven to 325°F (160°C).
  2. Pat the beef short ribs dry and season both sides with salt and black pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat and sear each side for 3-4 minutes.
  4. Remove the ribs and in the same pot, sauté chopped onion, carrot, and celery for about 5 minutes.
  5. Add minced garlic and tomato paste, cooking for another minute.
  6. Pour in red wine and scrape the bottom, letting it simmer for about 5 minutes.
  7. Return the ribs to the pot, cover with beef broth and add herbs.
  8. Cover and braise in the oven for 2½ to 3 hours until fork-tender.
  9. Remove ribs, strain the sauce, and skim off excess fat.
