For the Chicken Marinade
  • 1 lb boneless, skinless chicken breasts cubed
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp dried oregano

For the Lemon Rice
  • 1 cup basmati rice rinsed
  • 2 cups chicken broth low-sodium
  • 1 tbsp lemon juice for flavor
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 2 tbsp fresh dill chopped
  • 1 tbsp remaining lemon juice
  • to taste salt
  • to taste olive oil for drizzling
For Garnishing
  • 2 lemon wedges
  • 2 tbsp fresh parsley chopped

Method
 

Preparation Steps
  1. In a medium bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add the cubed chicken breasts and coat well. Let sit at room temperature for 10 minutes.
  3. In a medium saucepan, bring chicken broth and lemon juice to a boil. Add the rinsed rice, cover, reduce the heat, and simmer for 15 minutes.
  4. In a bowl, combine yogurt, dill, remaining lemon juice, salt, and olive oil to make tzatziki. Chill in the refrigerator.
  5. Preheat the grill and thread chicken onto skewers. Grill for 10-12 minutes until cooked through.
  6. Fluff the lemon rice, serve with grilled skewers, tzatziki, parsley, and lemon wedges.
