  1. Preheat your oven to 350°F (175°C) and coat a 9x13-inch baking dish with nonstick spray.
  2. Cook the breakfast sausage, red bell pepper, and green onions in a large skillet over medium-high heat for about 6-8 minutes.
  3. In a mixing bowl, whisk the eggs with heavy cream, Dijon mustard, Tabasco, salt, and black pepper until frothy.
  4. Stir in the shredded cheddar cheese, then fold in the thawed hash browns and the cooled sausage mixture.
  5. Pour the mixture into the prepared baking dish, spreading evenly.
  6. Cover with aluminum foil and bake for 50 minutes until bubbly and set.
  7. Remove foil, add remaining cheese, and bake for an additional 10-15 minutes at 400°F until golden.
