Baking Instructions
- Preheat your oven to 350°F (180°C) and line baking trays with parchment paper.
- Cream the unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually combine with wet ingredients.
- Shape cookies using about 2 tablespoons of dough each, placing on the prepared tray with space in between.
- Press a pineapple ring onto each mound of dough, ensuring a good connection.
- Sprinkle a small amount of granulated sugar over each pineapple ring.
- Bake for 11-13 minutes until golden around the edges and set in the center.
- Allow cookies to cool on the tray for about 5 minutes before transferring to a wire rack to cool completely.
