For the Salad
  • 1 medium Cucumber Thinly sliced
  • 1 medium Pineapple Diced
  • 1 medium Red Bell Pepper Diced
  • 0.5 medium Red Onion Finely chopped
  • 1 bunch Cilantro Chopped
  • 1 tablespoon Fresh Lime Juice Preferably fresh
  • 1 tablespoon Honey or Agave Syrup
  • to taste Salt & Pepper Adjust to preference
  • 1 medium Jalapeño (Optional) Finely chopped, seeds removed for less spice

Method
 

Preparation Steps
  1. Wash and thinly slice cucumber, soak in ice water for 5–10 minutes, then drain and pat dry.
  2. Remove skin and core from pineapple, then cut into bite-sized cubes and add to mixing bowl.
  3. Dice red bell pepper and finely chop red onion, add to the bowl and mix.
  4. Chop cilantro and add to the mixture. If desired, add finely chopped jalapeño.
  5. In a small bowl, whisk together fresh lime juice and honey/agave syrup.
  6. Pour dressing over salad and gently toss to combine without crushing ingredients.
  7. Season with salt and pepper to taste and adjust dressing as necessary.
  8. Let the salad sit for 10-15 minutes to allow flavors to meld.
  9. Serve chilled, garnished with extra cilantro.
