Preparation Steps
- Wash and thinly slice cucumber, soak in ice water for 5–10 minutes, then drain and pat dry.
- Remove skin and core from pineapple, then cut into bite-sized cubes and add to mixing bowl.
- Dice red bell pepper and finely chop red onion, add to the bowl and mix.
- Chop cilantro and add to the mixture. If desired, add finely chopped jalapeño.
- In a small bowl, whisk together fresh lime juice and honey/agave syrup.
- Pour dressing over salad and gently toss to combine without crushing ingredients.
- Season with salt and pepper to taste and adjust dressing as necessary.
- Let the salad sit for 10-15 minutes to allow flavors to meld.
- Serve chilled, garnished with extra cilantro.
