  • 2 tablespoons lime juice for sauce
  • 2 cloves garlic
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Combine olive oil, ground cumin, paprika, garlic powder, salt, black pepper, and fresh lime juice in a medium mixing bowl to prepare the marinade.
  3. Pat the whole chicken dry and rub the spice mixture all over it.
  4. Place the chicken in a roasting pan and roast for 1 to 1.5 hours until the internal temperature reaches 165°F (75°C).
  5. In a blender, combine mayonnaise, sour cream, jalapeño, fresh cilantro, lime juice, garlic, salt, and black pepper to make the creamy green sauce.
  6. Once cooked, let the chicken rest for 10 minutes.
  7. Carve the chicken and serve hot with the creamy green sauce.
