Preparation
- Heat a large nonstick skillet over medium heat. Warm one large flour tortilla for 1-2 minutes until soft.
- Sprinkle half a cup of shredded mozzarella cheese on the warmed tortilla. Place a second tortilla on top.
- Cook for 2-4 minutes until the bottom is golden brown. Flip and cook until both sides are crispy.
- Transfer to a surface, spread 3 tablespoons of pizza sauce on top, add cheese and pepperoni, and olives if desired.
- Preheat oven to 400°F (200°C). Transfer to a baking sheet and bake for 5-10 minutes until cheese is melted.
- Remove from oven, cool slightly, then slice into wedges and serve hot.
