  • 2 cloves Garlic Minced; use fresh garlic for best flavor.
  • 3 tablespoons Olive Oil Extra virgin olive oil offers the best flavor.
  • Salt and Pepper Essential for seasoning.
For the Cheese
  • 250 g Mozzarella Cheese Diced; burrata can be used for a richer twist.
  • 50 g Grated Parmesan Cheese Optional for baking; Pecorino Romano is a good alternative.
For Garnishing
  • Fresh Basil Leaves Adds freshness; dried basil can be a substitute.

Method
 

Cooking Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add 400g of pasta and cook until al dente, about 10-12 minutes. Drain and set aside.
  2. Prepare the Sauce: In a skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  3. Add Garlic: Stir in minced garlic and sauté for an additional minute, avoiding burning.
  4. Incorporate Tomatoes: Add canned tomatoes and simmer for 15-20 minutes until thickened. Season with salt and pepper.
  5. Mix in Pasta: Toss the drained pasta in the sauce, adding reserved pasta water if needed for consistency.
  6. Add Cheese: Fold in diced mozzarella, allowing it to melt slightly into the pasta.
  7. Garnish: Remove from heat and mix in torn basil leaves. Adjust seasoning if necessary.
  8. Bake (Optional): Transfer to a baking dish, sprinkle with grated Parmesan, and bake at 180°C (350°F) for 15-20 minutes until golden brown.
  9. Rest: Let sit for a few minutes after baking before serving.
  10. Serve: Garnish with additional basil and olive oil before enjoying your Pasta alla Sorrentina with a fresh salad.
