  • 1 small bunch fresh thyme or use dried thyme
  • 3 to 4 sprigs fresh rosemary or use dried rosemary

  • 0.5 cup chicken broth use low-sodium if preferred
  • 0.5 cup white wine (such as Chardonnay or Pinot Grigio) omit for non-alcoholic

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and line a large casserole dish with foil.
  2. Spread sliced shallots evenly in the dish, layer half the garlic cloves, and sprinkle fresh thyme and rosemary over the shallots.
  3. Drizzle chicken with oil, season with salt and pepper, and place skin-side up in the dish, adding remaining garlic and thyme.
  4. Pour chicken broth and white wine around the chicken without disturbing the seasoning.
  5. Roast for about 1 hour until skin is golden brown and internal temperature reaches 165°F (74°C).
  6. Switch to broil mode for 5-7 minutes for extra crispiness.
  7. Remove chicken from oven, let rest for a few minutes, and serve with pan juices.
