Preparation Steps
- Preheat your oven to 375°F (190°C) and lightly spray a 9x13 inch casserole dish with non-stick cooking spray.
- In the casserole dish, combine the orzo, chicken stock, and heavy cream along with the seasonings, cooked chicken, minced garlic, spinach, cherry tomatoes, and lemon juice.
- Sprinkle half of the mozzarella and Parmesan cheese over the top of the orzo mixture.
- Bake for about 40 minutes, until the orzo absorbs most of the liquid and is tender. The top should be golden brown and bubbly.
- Let the dish sit for 10 minutes after baking to allow flavors to meld and sauce to thicken.
- Gently stir before serving to combine the layers of flavors and distribute melted cheese.
