Preparation Steps
  1. Preheat your oven to 375°F (190°C) and lightly spray a 9x13 inch casserole dish with non-stick cooking spray.
  2. In the casserole dish, combine the orzo, chicken stock, and heavy cream along with the seasonings, cooked chicken, minced garlic, spinach, cherry tomatoes, and lemon juice.
  3. Sprinkle half of the mozzarella and Parmesan cheese over the top of the orzo mixture.
  4. Bake for about 40 minutes, until the orzo absorbs most of the liquid and is tender. The top should be golden brown and bubbly.
  5. Let the dish sit for 10 minutes after baking to allow flavors to meld and sauce to thicken.
  6. Gently stir before serving to combine the layers of flavors and distribute melted cheese.
