Cooking Steps
  1. Preheat your oven to 400°F (200°C). Gather your ingredients as the oven heats up.
  2. Wash and chop all vegetables into uniform pieces, about 1-inch chunks; halve the cherry tomatoes.
  3. Toss the chopped vegetables with olive oil, oregano, and minced garlic in a mixing bowl.
  4. Spread the seasoned vegetables onto a large baking sheet in a single layer.
  5. Roast the vegetables in the preheated oven for about 30 minutes until fork-tender and slightly charred.
  6. In the last few minutes of roasting, sprinkle crumbled feta cheese over the vegetables.
  7. Remove from the oven, let cool for a few minutes, then serve warm or at room temperature.
