- In a food processor, combine fresh cranberries, olive oil, coconut aminos, maple syrup, garlic, fresh rosemary, and dry white wine or chicken broth. Blend until smooth.
- Place the bone-in, skin-on chicken thighs in a baking dish, pouring the marinade over the top. Cover and refrigerate for at least 30 minutes.
- Preheat your oven to 375ºF (190ºC). Gather additional garnishes while the oven warms.
- Remove the chicken from the refrigerator and place it in the oven. Brush tops with olive oil, sprinkle with salt, and add cranberries and rosemary. Bake for about 20 minutes.
- Drizzle maple syrup on top and switch the oven to broil for 3-10 minutes until the skin crisps.
- Let the chicken rest for a few minutes, spoon excess marinade over it, and garnish with fresh rosemary.
