Method
 

Step-by-Step Instructions
  1. In a food processor, combine fresh cranberries, olive oil, coconut aminos, maple syrup, garlic, fresh rosemary, and dry white wine or chicken broth. Blend until smooth.
  2. Place the bone-in, skin-on chicken thighs in a baking dish, pouring the marinade over the top. Cover and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375ºF (190ºC). Gather additional garnishes while the oven warms.
  4. Remove the chicken from the refrigerator and place it in the oven. Brush tops with olive oil, sprinkle with salt, and add cranberries and rosemary. Bake for about 20 minutes.
  5. Drizzle maple syrup on top and switch the oven to broil for 3-10 minutes until the skin crisps.
  6. Let the chicken rest for a few minutes, spoon excess marinade over it, and garnish with fresh rosemary.
