- Gather your ingredients. Wash and chop the chicken thighs into bite-sized pieces, slice the sausage, and dice the bell peppers and onion.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add chicken thighs and sear for 5-7 minutes until golden brown.
- Add another tablespoon of olive oil, then toss in the sliced sausage and sauté for 3-4 minutes until browned.
