  • 1 cup Bell peppers Any color, diced

  • 3 tablespoons Olive oil

Method
 

Step-by-Step Instructions
  1. Gather your ingredients. Wash and chop the chicken thighs into bite-sized pieces, slice the sausage, and dice the bell peppers and onion.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add chicken thighs and sear for 5-7 minutes until golden brown.
  3. Add another tablespoon of olive oil, then toss in the sliced sausage and sauté for 3-4 minutes until browned.
  4. Stir in the rice, then pour in chicken broth and Cajun seasoning. Bring to a boil, then reduce heat and cover.
  5. Simmer for 20 minutes or until rice is tender and liquid has absorbed. Stir occasionally.
  6. Fluff rice with a fork, garnish with parsley and lemon, and serve hot.
