Method
 

Preparation Steps
  1. Crush about 1 ½ cups of graham crackers in a food processor until fine. Melt ½ cup of unsalted butter and mix it with the crumbs until they resemble wet sand. Press mixture into a 9-inch pie dish and chill for 15 minutes.
  2. In a mixing bowl, blend 2 cups of blueberries. Add ½ cup chia seeds, ⅓ cup sugar, 2 tablespoons lemon juice, and a pinch of salt. Fold in 1 cup Greek yogurt and let sit for 5–10 minutes.
  3. Pour the thickened blueberry filling over the crust, smoothing the top. Cover and chill for 2-4 hours, overnight is best.
  4. Garnish with fresh blueberries, lemon zest, and mint leaves. Slice with a warm knife and serve cold.
