- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Roll out thawed puff pastry and slice into long, thin strips, around half an inch wide.
- Wrap the vegetarian sausages with the pastry strips, leaving gaps for 'eyes'.
- Place wrapped sausages on the prepared baking sheet with space in between.
- If using, brush the wrapped sausages with egg wash or almond milk.
- Bake for about 14 minutes until pastry is puffed and golden brown.
- Let cool slightly, then decorate with mustard or ketchup and serve warm.
