Method
 

Instructions
  1. Pat the brisket dry with paper towels. Rub with kosher salt, black pepper, smoked paprika, onion powder, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat. Sear the brisket for 3-4 minutes on each side until golden-brown.
  3. Remove brisket, then add sliced onion and minced garlic to the skillet. Sauté until softened. Pour in beef broth, balsamic vinegar, brown sugar, tomato paste, and Worcestershire sauce, then simmer for 2 minutes.
  4. Transfer brisket to slow cooker and pour sauce over it. Add bay leaves and thyme. Cook on low for 8-10 hours.
  5. Remove brisket, let rest for 10 minutes, slice against the grain, and serve with sauce.
