  • 1 whole Egg room temperature
  • 1 large Egg Yolk
  • 1 teaspoon Peppermint Extract
  • 6 drops Green Food Coloring gel coloring recommended
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Kosher Salt
For the Topping
  • 24 pieces Chocolate Kisses can use different types

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar using an electric mixer until light and fluffy.
  3. Add the whole egg, egg yolk, peppermint extract, and green food coloring, mixing until well blended.
  4. In a separate bowl, whisk together flour, baking powder, and kosher salt. Gradually add to the wet ingredients and mix gently.
  5. Form small dough balls about 1 inch in diameter and space them 2 inches apart on the prepared sheets.
  6. Bake for 7-9 minutes; ideally 8 minutes, until edges are set but centers are soft.
  7. Allow cookies to cool for 2 minutes, then gently press a chocolate kiss into the center of each cookie.
  8. Transfer cookies to a wire rack to cool completely.
