Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper or silicone mats.
- In a large mixing bowl, cream together the softened butter and powdered sugar using an electric mixer until light and fluffy.
- Add the whole egg, egg yolk, peppermint extract, and green food coloring, mixing until well blended.
- In a separate bowl, whisk together flour, baking powder, and kosher salt. Gradually add to the wet ingredients and mix gently.
- Form small dough balls about 1 inch in diameter and space them 2 inches apart on the prepared sheets.
- Bake for 7-9 minutes; ideally 8 minutes, until edges are set but centers are soft.
- Allow cookies to cool for 2 minutes, then gently press a chocolate kiss into the center of each cookie.
- Transfer cookies to a wire rack to cool completely.
