  • 1 pound Sirloin Steak Choose a good-quality cut for tender results
  • 2 tablespoons Olive Oil Extra virgin is best for flavor
For the Marinade
  • 2 cloves Garlic Minced; fresh is best
  • 2 tablespoons Lemon Juice Fresh is preferred
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt Kosher or sea salt recommended
  • 1 teaspoon Black Pepper Freshly ground recommended
For the Base
  • 2 cups Cooked Grains Brown rice, quinoa, or cauliflower rice
For the Veggies
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Diced
  • 1/2 medium Red Onion Sliced
  • 1/2 cup Kalamata Olives Pitted
  • 1/4 cup Fresh Herbs Parsley or dill, chopped
For the Tzatziki
  • 1 cup Greek Yogurt Plain
  • 1/2 cup Grated Cucumber Squeeze out excess water
  • 1 clove Garlic Minced
  • 1 tablespoon Lemon Juice Fresh
  • 1/4 teaspoon Salt
For the Vinaigrette
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Honey Optional

Step-by-Step Instructions
  1. In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper to create a marinade. Coat the sirloin steak evenly and let it marinate for at least 30 minutes up to 4 hours in the refrigerator.
  2. In a mixing bowl, combine Greek yogurt, grated cucumber (squeezed to remove excess water), minced garlic, lemon juice, and a pinch of salt. Cover and chill it in the refrigerator for at least 20 minutes.
  3. Whisk together olive oil, lemon juice, dried oregano, and honey (if using) in a small bowl until well combined.
  4. Heat a cast-iron skillet over medium-high heat and add a splash of olive oil. Sear the marinated steak for 4–5 minutes on each side for medium-rare.
  5. Prepare your base with cooked grains in each bowl, slice the rested steak thinly, and arrange it atop the grains along with cherry tomatoes, cucumber, red onion, and olives.
  6. Top each bowl with tzatziki and a drizzle of vinaigrette, finishing with fresh herbs.
