  • 1/2 cup Almond Flour Can be replaced with gluten-free flour or wheat flour
  • 1 large Egg Can substitute with flax egg for vegan
  • 2 tablespoons Olive Oil Can use neutral oil
  • 1 teaspoon Garlic Powder Fresh garlic can be used for a stronger taste
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine chopped spinach, crumbled feta, almond flour, egg, olive oil, garlic powder, salt, and pepper. Mix until the mixture holds together.
  3. Scoop tablespoon portions of the mixture onto the baking sheet, flattening each to about 1/4 inch thick.
  4. Bake for 15 to 18 minutes until the edges are golden brown and tops look dry.
  5. Remove from the oven and let cool on the baking sheet for about 5 minutes before serving.
