For Seasoning
  • 1 tsp Dried Oregano Key herb for Mediterranean essence.
  • 1 tsp Dried Thyme Fresh thyme can be used.
  • 1/4 cup Fresh Parsley For garnishing.

Step-by-Step Instructions
  1. Thoroughly season the chicken breasts with salt, black pepper, paprika, and garlic powder; let sit while preparing skillet.
  2. Heat olive oil in a large skillet over medium heat until shimmering. Add the seasoned chicken and cook for 5-7 minutes on each side until golden brown, then remove and keep warm.
  3. In the same skillet, sauté the diced onion for 3-4 minutes until translucent, then add minced garlic and stir for another 1-2 minutes.
  4. Pour in the chicken broth, lemon juice, and zest, while scraping up any browned bits. Let it simmer for about 2 minutes.
  5. Stir in artichoke hearts, halved Kalamata olives, oregano, and thyme. Mix well and return the chicken to the pan.
  6. Cover and let simmer on low heat for 10-15 minutes until sauce thickens and chicken is heated through.
  7. Garnish with fresh parsley and serve over rice, couscous, or alongside bread.
