Preparation Steps
  1. Begin by slicing your crusty sourdough bread into thick, even pieces, about ¾ inch each.
  2. Gather the rest of your ingredients: slice the mozzarella and crumble the feta cheese, and have your sun-dried tomatoes and fresh basil ready.
  3. Layer your prepared fillings between two slices of sourdough bread, starting with mozzarella, crumbled feta, sun-dried tomatoes, and fresh basil.
  4. Top it off with another slice of mozzarella before bringing the two slices together.
  5. Drizzle olive oil into a non-stick skillet and heat over medium heat for about 1-2 minutes until it shimmers.
  6. Carefully place the assembled sandwich in the skillet and cook for 3-4 minutes until the bottom is golden brown.
  7. Flip the sandwich and press down slightly, cooking the other side for another 3-4 minutes until golden.
