  • 1 pound Chicken Breasts boneless and skinless
  • 2 Zucchini fresh
  • 1 cup Cherry Tomatoes halved
  • 1 Red Onion sliced thin
  • 3 cloves Garlic minced
For the Seasoning
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper freshly ground
  • 1/4 teaspoon Red Pepper Flakes optional
For the Cheesy Finish
  • 1 cup Mozzarella Cheese shredded
  • 1/4 cup Parmesan Cheese grated
  • 2 tablespoons Fresh Parsley chopped, for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish by greasing it lightly with olive oil.
  2. In a large mixing bowl, combine diced chicken breasts, sliced zucchini, halved cherry tomatoes, thinly sliced red onion, and minced garlic. Drizzle with olive oil and sprinkle in dried oregano, basil, smoked paprika, salt, pepper, and red pepper flakes. Toss thoroughly.
  3. Spread the mixture evenly in the baking dish and sprinkle mozzarella and Parmesan cheese over the top.
  4. Cover with aluminum foil and bake for 20 minutes.
  5. Remove the foil and bake for an additional 10–15 minutes until cheese is golden and bubbly.
  6. Remove from the oven and let it rest for a few minutes.
  7. Serve garnished with fresh parsley.
