Preparation Steps
- Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish by greasing it lightly with olive oil.
- In a large mixing bowl, combine diced chicken breasts, sliced zucchini, halved cherry tomatoes, thinly sliced red onion, and minced garlic. Drizzle with olive oil and sprinkle in dried oregano, basil, smoked paprika, salt, pepper, and red pepper flakes. Toss thoroughly.
- Spread the mixture evenly in the baking dish and sprinkle mozzarella and Parmesan cheese over the top.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10–15 minutes until cheese is golden and bubbly.
- Remove from the oven and let it rest for a few minutes.
- Serve garnished with fresh parsley.
