- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- Combine chicken, zucchini, cherry tomatoes, red onion, and minced garlic in a mixing bowl. Drizzle with olive oil and sprinkle with oregano, basil, paprika, salt, pepper, and red pepper flakes.
- Transfer the chicken and vegetables into the prepared baking dish and spread evenly. Sprinkle mozzarella and Parmesan cheese on top.
- Cover with aluminum foil and bake for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes until cheese is golden and chicken reaches an internal temperature of 165°F (75°C).
