Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. Combine chicken, zucchini, cherry tomatoes, red onion, and minced garlic in a mixing bowl. Drizzle with olive oil and sprinkle with oregano, basil, paprika, salt, pepper, and red pepper flakes.
  3. Transfer the chicken and vegetables into the prepared baking dish and spread evenly. Sprinkle mozzarella and Parmesan cheese on top.
  4. Cover with aluminum foil and bake for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes until cheese is golden and chicken reaches an internal temperature of 165°F (75°C).
  5. Remove from oven, let sit for a few minutes, and garnish with parsley before serving.
