  • 4 pieces Boneless, skinless chicken breasts can substitute with turkey breast
  • 2 medium Zucchini fresh zucchini preferred
  • 1 cup Cherry tomatoes can swap with diced bell peppers
  • 1 medium Red onion yellow onion can be used if needed
  • 3 cloves Garlic minced
For Seasoning
  • 2 tablespoons Olive oil can substitute with avocado oil
  • 1 teaspoon Dried oregano fresh can be substituted using three times as much
  • 1 teaspoon Dried basil can replace with Italian seasoning
  • 1 teaspoon Smoked paprika regular paprika works as an alternative
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black pepper adjust to taste
  • 1 teaspoon Red pepper flakes optional
For Toppings
  • 1 cup Shredded mozzarella cheese or feta cheese
  • 1/4 cup Grated Parmesan cheese can skip for a lighter option
  • 1/4 cup Fresh parsley for garnish

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
  2. In a large bowl, combine chicken, sliced zucchini, halved cherry tomatoes, diced red onion, minced garlic, and olive oil. Add oregano, basil, paprika, salt, and pepper. Toss to coat.
  3. Transfer the mixture to the greased baking dish, spreading it evenly. Sprinkle shredded mozzarella and Parmesan cheese over the top.
  4. Cover with aluminum foil and bake for 20 minutes.
  5. Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and chicken reaches 165°F (75°C).
  6. Let rest for a few minutes, then garnish with parsley and serve warm.
