  • 800 g Waxy Potatoes
  • 3 Leeks sliced
  • 300 ml Double Cream can substitute with half-and-half
  • 200 ml Whole Milk
  • 2 cloves Garlic crushed
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/4 tsp Nutmeg optional
  • 150 g Gruyère or Cheddar Cheese for topping

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (160°C fan) or 350°F.
  2. Peel and thinly slice the waxy potatoes to about 3mm thick.
  3. Melt a knob of butter in a sauté pan and add the sliced leeks. Cook for about 5 to 7 minutes.
  4. In a mixing bowl, combine the double cream, whole milk, crushed garlic, salt, pepper, and nutmeg. Whisk until well blended.
  5. Grease a baking dish with butter. Layer the potatoes, followed by leeks, until all are used.
  6. Pour the cream mixture evenly over the layered ingredients.
  7. Sprinkle the chosen cheese over the top layer of potatoes.
  8. Cover with foil and bake for about 45 minutes. Then remove the foil and bake for an additional 15-20 minutes.
  9. Allow the gratin to cool for about 10 minutes before serving.

Notes

Ensure potato slices are uniform at about 3mm thick for even cooking. Extend baking time if needed. Refrigerate prepared gratin for up to 24 hours before baking for convenience.
