Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread on half of the baking sheet.
  3. Combine chicken breasts with remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper until coated.
  4. Place glazed chicken on the other half of the baking sheet without overlapping.
  5. Roast in the oven for 25-30 minutes until chicken reaches 165°F and sweet potatoes are fork-tender.
  6. Melt butter in a skillet and toast pecans for 3-4 minutes until fragrant and golden brown.
  7. Serve by sprinkling toasted pecans over sweet potatoes and garnish with parsley.
