  • 2 large Apples Firm varieties like Honeycrisp or Braeburn are ideal.
  • 1 medium Onion Can be swapped for shallots for a subtler flavor.
  • 5 cloves Garlic Fresh garlic is ideal, can substitute with powder.
  • 0.25 cup Olive Oil Avocado oil can be used as an alternative.
For the Glaze
  • 0.25 cup Maple Syrup Honey or agave syrup can be alternatives.
  • 3 tbsp Stone Ground Dijon Mustard Yellow mustard is a suitable substitute.
  • 0.5 tsp Salt Adjust according to your taste.
  • 0.5 tsp Black Pepper Freshly cracked pepper is preferable.
  • 1 tsp Thyme Rosemary can be swapped if desired.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Core and chop the apples into ½-inch cubes, slice the carrots diagonally into ¼-inch pieces, dice the onion, and finely chop garlic.
  3. In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme.
  4. Add the carrots, apples, and onions to the glaze, and toss until evenly coated.
  5. Spread the glazed vegetables in a single layer on a metal roasting pan.
  6. Roast for 15 minutes, then flip the vegetables and roast for an additional 10-15 minutes until tender and caramelized.
